my favorite combination! cinnamon and raisins.
RECIPE:
batter:
1 and 1/2 cup whole wheat flour
1/4 cup brown sugar
1/4 cup truvia baking blend
2 teaspoons baking powder
2 tablespoons coconut oil (melted)
2 eggs
1 tablespoon vanilla extract
1/2 cup raisins
1 tablespoon cinnamon
pinch salt
cinnamon mixture:
5 dates
1/4 cup vanilla almond milk
1 tablespoon cinnamon
in a large bowl, mix truvia, brown sugar, flour, baking powder, 1 tablespoon cinnamon and salt together until well combined
in another bowl, mix eggs, coconut oil and vanilla extract
add the wet ingredients to dry ingredients
add almond milk (about 1/2 cup) until you get a smooth batter like consistency
fold in raisins
in a food processor or blender, blend dates, 1/4 cup almond milk and 1 tablespoon cinnamon (you may want to soak the dates for a few hours so they get softer, so easier to blend, but if…
